Michigan ProStart: Crop Box Lessons |
During the 2019-2020 school year, Michigan ProStart students were tasked with taking a deep dive into the vast agriculture produce available in our state. Students were assigned a new Michigan-grown fruit or vegetable each month, and then were challenged to produce a nutritious recipe utilizing that item.

- Dry Blueberries
- Beets
- Pumpkin
- Cranberry Beans
- Maple Syrup
- Onions
- Sweet Potatoes
- Spinach
- Carrots
The students learned about the raw product, the farmer that grew the product, the flavor profile that each product possesses, and its seasonal availability. They also learned about products that have a long shelf life or are processed and available for year-round use such as maple syrup and dry beans.
“Students were so excited when our crop boxes arrived in the mail each month,” said Julie Ivan, a ProStart Instructor at Saginaw Career Complex. “Students were given the task of coming up with a unique recipe. Our local neighborhood magazine featured one of the students’ recipe each month. This was a great learning experience for the students, learning what Michigan has to offer. When we went to online learning, we continued with the crop box and I structured my lessons around agricultural in Michigan.”
Lessons plans for the Michigan ProStart curriculum were supported by a USDA Specialty Crop Block Grant to the Michigan Restaurant & Lodging Association Educational Foundation (MRLAEF),in partnership with the Michigan Department of Agriculture and Rural Development.
