Michigan ProStart in 2020: What’s Ahead
#MICropBox
ProStart students have been developing recipes that incorporate Michigan-grown products into healthy recipes and a collection of these recipes is available at www.MIHealthyFood.org. The recipes show creative ways to use black beans, cranberry beans, beets, blueberries, maple syrup, pumpkin, and walnuts. These recipes show the artistic skills of the students, and some easy ways to increase the use of Michigan specialty products on your menus.

High School Lodging Program Meeting with the Michigan Department of Education and Career & Technical Education Leadership
The Michigan Restaurant & Lodging Association Educational Foundation (MRLA EF) presented the Hospitality & Tourism Management Program (HTMP), a program specifically designed for high school students, at the Michigan Career & Technical Education Conference, January 26-28. Leadership from the Michigan Department of Education and the Career & Technical Education programs was in attendance for the presentation, as well as CTE directors for local school districts. This presentation is one of several ways MRLAEF is informing school systems about the HTMP lodging curriculum and the career ladder and growth opportunities provided by the lodging industry in Michigan.
We are looking for establishments who would like to work with classrooms across Michigan as we bring the HTMP to Michigan. The hospitality industry in Michigan needs an active feeder program. Our counterparts in Florida and South Carolina have large HTMP schools feeding the hospitality management programs and hotel manager apprenticeships alike. The MRALEF is dedicated to bringing these students and future employees to the lodging members. If you would like to be part of the HTMP program launch in Michigan, please contact Amanda Smith, [email protected] or 517-377-3927.

Artisan Cheese Making
ProStart educators participated in a professional development workshop at Traffic Jam & Snug in Detroit. Attendees learned about the process of taking 4,000 gallons of freshly delivered milk and turning it into 400 lbs of cheese. They also learned about pressing cheese, the 90-day holding process, and other vital steps. Educators made a Monterey Jack base cheese and then were able to help select the flavorings, including a tomato-basil, lemon-lime, and garlic. Traffic Jam & Snug is one of Michigan’s finest artisan cheesemakers and creates several varieties, most notably the Asiago Bleu that teachers were able to sample. Understanding where food comes from and the craftsmanship that goes into its preparation will help educators to make students excited for careers in the industry.
