MHF celebrates a record attendance for the annual ProStart Summer Camp
By: Amanda Smith | Executive Director of the Michigan Hospitality Foundation
A summer tradition since 2016, the Nate Santelli ProStart Summer Camp returned in full force with our largest group yet of eager students. This year, the camp had a waitlist, with more and more students ready and excited to hone their culinary skills.
Over a four-day period in June, students explored, cooked, and grew in their knowledge and passion for the industry. The 2023 Skills Labs included trainings on Fish Fabrication, Soups, Pâté à Choux, Fondant, and other critical cake decorating techniques. Students learned the foundations of table-setting, creating their own masterful centerpieces for the camp's capstone meal. They also explored the impacts of the larger tourism industry by visiting a historic lighthouse and touring Lake Huron's coast, which has driven Port Huron's economy since the city's inception. The Culinary Institute of Michigan, near Port Huron, was an excellent setting for the students, providing state-of-the-art equipment and instruction from decorated chefs, in addition to the glory of Pure Michigan.
Looking ahead to Summer 2023, the camp will have two segments, one dedicated to Baking & Pastry and on that hones in on culinary techniques. Students can choose to attend one segment or both, depending on their interest levels.
